Custom Smoked Meats

The Smoke House at the Fatted Calf is THE place to get your custom smoked meats. You can bring in your own meat to be smoked by the pound, or have part of your custom processed beef smoked just the way you want it. We also will smoke meats we provide for events and fundraisers.
Some of our products include beef and pork ribs, brisket, chicken quarters, turkey drum sticks (when available), and sausages. We are adding to our options as needs arise so check back often.

CUSTOM SMOKED MEATS

We custom smoke beef and venison (during deer season). For custom smoked beef, you can add any smoking service to your custom processing with a whole or half beef order. 

BEEF 

When you bring your beef in for custom processing you can choose to have a portion of it put into snack sticks, summer sausage, and/or jerky. The cost for this services is in addition to the normal processing fee. You can also choose to have specific cuts smoked, vacuum sealed, then frozen for you to take out and enjoy later. Another option for those who like to do their own smoking is to let us vacuum marinate your brisket before we freeze it then all you have to do is unthaw it and it's ready for the smoker. 

The following have a 20lb minimum order per flavor. All meats are priced at wet weight. (1# wet jerky = 6-8oz cooked)

Snack Sticks - $6.00/lb add cheese $6.57/lb

Summer Sausage - $6.00/lb add cheese $6.57/lb

Whole muscle jerky - $6.00/lb

Marinate and vacuum tumble your brisket - $2.20/lb

Smoke your brisket - $1.89/lb

DEER 

Deer processing is by appointment only. We have limited appointments available during deer season. By appointment we simply mean after you bag your deer give us a call to make sure we are not full. If you confident you will be getting one, call us and we will do our best to reserve a spot to get you in. Whole carcass DEER will NOT be accepted. Boned out venison only will be accepted. Deer must be transported in ice chests and kept cold or frozen. We do not age or hang venison. It will not be in our cooler outside of your ice chest. We will process your meat, sterilize your ice chest and put your frozen packaged product back in your ice chest for pick up. We will do our best to process your meat in the order in which it is received.

 

The deer you bring in to us is the deer you will take home. If it is gut shot, mangled, or super bloody, it will not make quality product. The best way to ensure clean meat is to first of all, shoot it in the head or upper torso, then bone it out and stick it in an ice chest with water and ice. As the ice melts, drain it off and add fresh ice daily until you get it to us. You can bring it in frozen but it must be from the current year. 

PRICING for Deer

We will not accept any deer meat not already boned out.

Summer Sausage- $7.25/lb  - add cheese $7.82/lb

Jerky - $7.25/lb

Grind and package only  - $4.25/lb (includes adding beef fat/trimmings)
